Cowboy Hamburger Soup
This hearty, one pot soup combines ground beef, tender potatoes, and vegetables in a savory tomato broth with a southwestern kick.
easy.enzo81.xyzCowboy hamburger soup is a favorite in our house because it is so filling and easy to throw together. It has all the comforting elements of a traditional beef soup but gets a nice boost from chili beans, green chiles, and warm spices. It is the perfect meal for busy weeknights when you want something satisfying without spending all evening in the kitchen.
Since everything cooks in a single pot, cleanup is a breeze. It also makes a big batch, which means you have delicious leftovers ready for a quick lunch the next day. If you want to make it extra fun, set out bowls of shredded cheddar, sour cream, and hot sauce so everyone can customize their own bowl.
