There is something so satisfying about a big pot of soup simmering on the stove all afternoon. This 15 bean soup recipe is a classic way to feed a crowd and it is loaded with fiber and nutrients that keep everyone feeling full and cozy.

I love using leftover holiday ham in this soup because the bone adds so much depth to the broth. If you do not have ham on hand, a smoked ham hock from the grocery store works just as well to create that signature savory flavor.

Ingredients

  • 1 package 15 bean soup mix (typically 20 ounces)
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 2 large carrots, peeled and sliced
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, 14.5 ounces
  • 1 pound smoked ham or 1 large ham hock
  • 8 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

8Instructions

  1. 1

Rinse the dry bean mix thoroughly in a colander and remove any small stones or debris.

  2. 2

Soak the beans in a large pot of water overnight, then drain and rinse them well before starting the soup.

  3. 3

Heat the olive oil in a large heavy pot or Dutch oven over medium heat.

  4. 4

Add the onion, carrots, and bell pepper to the pot and cook until the vegetables soften, about 5 minutes.

  5. 5

Stir in the minced garlic and cook for another minute until fragrant.

  6. 6

Add the soaked beans, diced tomatoes, ham, oregano, and broth to the pot.

  7. 7

Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 2 to 3 hours until the beans are tender.

  8. 8

Remove the ham hock, shred any meat off the bone, return it to the pot, and season with salt and pepper before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to four days. This soup actually tastes better the next day after the flavors have had time to meld. You can also freeze portions in freezer safe bags for a quick lunch on busy days.
