There is nothing quite as comforting as a steaming bowl of French onion soup on a chilly evening. The secret is taking the time to caramelize your onions properly until they turn a deep golden brown, which creates a wonderful sweet and savory base for the broth.

This recipe feels like a fancy restaurant treat but is actually quite simple to make at home. I love using a mix of Gruyère and Parmesan for the best melt and a salty punch that balances the sweetness of the onions perfectly.

Ingredients

  • 6 cups yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 baguette, sliced into rounds
  • 2 cups Gruyère cheese, shredded
  • 1/2 cup Parmesan cheese, grated

10Instructions

  1. 1

Melt the butter and olive oil in a large pot over medium heat.

  2. 2

Add the sliced onions and cook them for about 30 to 40 minutes, stirring frequently until they are deep golden brown and very soft.

  3. 3

Stir in the sugar and minced garlic, then cook for another minute.

  4. 4

Pour in the white wine to deglaze the pot, scraping up all the tasty brown bits from the bottom.

  5. 5

Add the beef broth and fresh thyme, then bring the soup to a simmer.

  6. 6

Reduce the heat and let the soup simmer uncovered for about 20 minutes.

  7. 7

Preheat your oven broiler to high.

  8. 8

Ladle the soup into oven safe bowls and place a few slices of baguette on top of each bowl.

  9. 9

Generously sprinkle the Gruyère and Parmesan over the bread.

  10. 10

Place the bowls on a baking sheet and broil for 2 to 3 minutes until the cheese is melted and bubbly.

Tips

Store any leftover soup in the fridge for up to three days, but keep the bread and cheese separate until you are ready to serve. If you have extra time, a splash of balsamic vinegar during the caramelizing process adds a great depth of flavor.
