Cozy Apple Cider Pork Stew
A comforting one pot meal with tender pork, root vegetables, and a hint of apple that makes your kitchen smell amazing.
easy.enzo81.xyzI used to think beef stew was the king of comfort food, but this pork version changed my mind. The combination of savory pork shoulder and slightly sweet apples is a classic for a reason, and it creates a rich sauce that you will want to soak up with plenty of crusty bread.
This recipe is wonderful because it uses a little trick with the potatoes. Instead of adding extra flour or cream at the end, you just mash a few of the cooked potatoes right into the liquid to make it perfectly thick and hearty.
Ingredients
- 3 pounds pork shoulder, cut into 1 and a half inch chunks
- 1/4 cup all purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons canola oil
- 2 yellow onions, diced
- 3 cloves garlic, minced
- 1 Granny Smith apple, grated
- 2 tablespoons apple cider vinegar
- 1 and a half cups dry hard cider
- 3 cups reduced sodium chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried sage
- 2 bay leaves
- 1 cinnamon stick
- 3 large carrots, peeled and sliced
- 2 parsnips, peeled and sliced
- 3 russet potatoes, peeled and cubed
- 1 tablespoon Dijon mustard
- Fresh parsley or sage for garnish
10Instructions
- 1
Toss the pork chunks in a bowl with the flour, salt, and pepper until they are lightly coated.
- 2
Heat one tablespoon of the oil in a large pot over medium heat and brown half of the pork. Get a nice golden crust on all sides, then move it to a plate and repeat with the rest of the oil and pork.
- 3
Turn the heat down to medium low and add the onions to the same pot. Cook them for about 10 minutes until they are soft, making sure to scrape up any tasty bits from the bottom.
- 4
Stir in the grated apple and garlic and cook for just 30 seconds until you can smell them.
- 5
Pour in the hard cider and apple cider vinegar. Let it bubble for 2 minutes while you scrape the bottom of the pot with a wooden spoon.
- 6
Put the pork back in along with any juices from the plate. Add the broth, Worcestershire sauce, sage, bay leaves, and the cinnamon stick.
- 7
Bring the liquid to a boil then turn the heat down low. Cover it partway and let it simmer for 90 minutes.
- 8
Add the carrots, parsnips, and potatoes. Cover the pot again and cook for another 30 to 45 minutes until the vegetables are nice and tender.
- 9
Take out the cinnamon stick and bay leaves. Use a fork to mash a few of the potato chunks against the side of the pot to thicken the sauce.
- 10
Stir in the Dijon mustard and top with fresh herbs before serving.
Tips
Store any leftovers in an airtight container in the fridge for up to three days. The flavors actually get better after a day. If you prefer not to use alcohol, you can replace the hard cider with a mixture of apple juice and extra chicken broth.
