Italian wedding soup is one of those meals that just feels like a warm hug in a bowl. It is full of little chicken meatballs, tiny pasta, and fresh spinach that comes together perfectly in a clear, flavorful broth.

This recipe is a favorite at my house because it is filling but still feels light. If you want to save some time, you can shape the meatballs a day ahead and keep them in the fridge until you are ready to start cooking.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • 8 cups chicken broth
  • 1/2 cup acini di pepe pasta
  • 3 cups fresh baby spinach
  • 2 carrots, diced
  • 1 onion, finely diced
  • Salt and pepper to taste

7Instructions

  1. 1

In a mixing bowl, combine the ground chicken, breadcrumbs, parmesan, egg, parsley, and a pinch of salt and pepper.

  2. 2

Roll the mixture into small, bite sized meatballs and set them aside on a plate.

  3. 3

Bring the chicken broth to a gentle boil in a large pot over medium heat.

  4. 4

Add the carrots and onions to the broth and cook for about 5 minutes until they begin to soften.

  5. 5

Gently drop the meatballs into the simmering broth and cook for 8 to 10 minutes.

  6. 6

Stir in the acini di pepe pasta and continue to cook for another 8 minutes or until the pasta is tender.

  7. 7

Turn off the heat and stir in the fresh spinach, letting it wilt in the hot broth before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. Note that the pasta will soak up the broth over time, so you may want to add a splash of extra water or chicken stock when reheating.
