This dish is one of my favorite ways to shake up a standard chicken dinner. By using crushed pretzels instead of traditional breadcrumbs, you get an incredible golden crust that stays crunchy even after baking.

My best tip for success is to make sure your pretzel pieces are crushed into a mix of fine crumbs and small chunks. This texture gives you the best crunch in every single bite.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 3 cups salted pretzels
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Cooking spray

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

Place the pretzels in a sealed plastic bag and crush them with a rolling pin until they are a mix of fine crumbs and small crunchy bits.

  3. 3

Set up three shallow bowls for breading. Put the flour in the first. Whisk the eggs and Dijon mustard together in the second. Place the crushed pretzels in the third.

  4. 4

Dredge each piece of chicken in the flour, then dip it into the egg mixture to coat it completely.

  5. 5

Press the chicken firmly into the crushed pretzels so the pieces stick well to all sides.

  6. 6

Place the coated chicken on your baking sheet and lightly spray the tops with cooking spray.

  7. 7

Bake for 20 to 25 minutes or until the chicken is cooked through and the crust is golden brown.

Tips

Serve this chicken alongside a side of honey mustard for dipping. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them in the oven to keep the crust crispy.
