There is something so special about the way shallots soften and sweeten when you cook them slowly in butter. This pasta has become a favorite in my house because it feels a bit fancy but is actually quite simple to pull together on a busy weeknight.

I love serving this alongside a crisp salad with apples and goat cheese to balance out the richness of the cheese sauce. It is the kind of comfort food that warms you right up when the weather starts to turn chilly.

Ingredients

  • 12 ounces pasta of your choice
  • 4 large shallots, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 cup Gruyere cheese, freshly grated
  • 1/2 cup pasta cooking water
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

9Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

  2. 2

While the water heats up, melt the butter in a large skillet over medium heat.

  3. 3

Add the sliced shallots to the skillet and cook them slowly, stirring often, until they are golden brown and very soft.

  4. 4

Stir in the minced garlic and cook for about one minute until fragrant.

  5. 5

Before draining the pasta, reserve about half a cup of the starchy cooking water.

  6. 6

Add the cooked pasta directly into the skillet with the shallots.

  7. 7

Sprinkle the grated Gruyere cheese over the pasta and pour in a splash of the reserved cooking water.

  8. 8

Toss everything together over low heat until the cheese melts into a smooth and creamy sauce that coats the noodles.

  9. 9

Season with salt and plenty of black pepper before serving with a sprinkle of fresh parsley.

Tips

Store any leftovers in an airtight container in the fridge for up to two days. When reheating, add a tiny splash of water or milk to help bring the sauce back to life in the pan.
