There is something so comforting about a warm quiche on a slow morning. This crustless version is one of my favorite ways to use up butternut squash, and it keeps things light while still feeling really satisfying thanks to the eggs and bacon.

My best tip for this recipe is to roast your squash cubes until they are just starting to caramelize at the edges. This brings out a natural sweetness that balances perfectly with the salty bacon and fresh spinach.

Ingredients

  • 2 cups butternut squash, peeled and cut into small cubes
  • 6 slices bacon, chopped
  • 2 cups fresh baby spinach
  • 8 large eggs
  • 1/2 cup whole milk or heavy cream
  • 1 cup shredded cheddar or gruyere cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg

8Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Spread the butternut squash cubes on a baking sheet, toss with a little oil, and roast for about 20 minutes until tender.

  3. 3

While the squash roasts, cook the chopped bacon in a skillet until it is nice and crispy, then drain off the excess fat.

  4. 4

Lower the oven temperature to 350 degrees Fahrenheit and grease a pie dish or a baking pan.

  5. 5

In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.

  6. 6

Stir the roasted squash, cooked bacon, spinach, and half of the cheese into the egg mixture.

  7. 7

Pour everything into your prepared dish and top with the remaining cheese.

  8. 8

Bake for 30 to 35 minutes or until the center is set and the top is lightly golden brown.

Tips

You can store leftovers in an airtight container in the fridge for up to three days. This quiche also freezes beautifully, so feel free to slice it up and wrap individual portions for a quick grab and go breakfast.
