Who does not love a warm cinnamon roll on a slow weekend morning? These pancakes capture that classic flavor perfectly without the long wait time or the complicated dough work. They are soft, sweet, and always a hit with the family.

I have found that trying to swirl cinnamon sugar into the batter while it is on the griddle usually creates a burnt mess. This version is much cleaner because we pack all the spice into the batter and finish each pancake with a rich cream cheese glaze. It makes breakfast feel special without the stress.

Ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 ounces softened cream cheese
  • 1/2 cup powdered sugar
  • 2 tablespoons milk for the glaze

7Instructions

  1. 1

Whisk the flour, baking powder, sugar, cinnamon, and salt together in a large bowl.

  2. 2

In a separate small bowl, mix the milk, egg, and melted butter.

  3. 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix as a few lumps are perfectly fine.

  4. 4

Heat a lightly oiled griddle over medium heat.

  5. 5

Pour about 1/4 cup of batter for each pancake onto the griddle and cook until bubbles form on the surface. Flip and cook until golden brown.

  6. 6

While the pancakes cook, beat the softened cream cheese with the powdered sugar and extra milk until smooth.

  7. 7

Stack the warm pancakes and drizzle the cream cheese glaze generously over the top before serving.

Tips

Store any leftover pancakes in an airtight container in the fridge for up to two days. Reheat them quickly in the toaster or microwave. If you want a really pretty look, put the icing in a small plastic bag, snip the corner, and pipe it in a spiral over the pancakes.
