There is something so special about this omelette that I first discovered in a little kitchen in Venice. Instead of the usual flat eggs, you whip the whites into soft peaks, which turns a simple breakfast into something that looks and tastes like a delicate souffle.

It is surprisingly easy to pull off once you get the hang of folding the whites into the yolks. I love making this when I want my morning to feel a little more relaxed and indulgent without needing a long list of fancy ingredients.

Ingredients

  • 4 large eggs, separated
  • 1 tablespoon water
  • 1 tablespoon butter
  • A pinch of salt
  • Fresh herbs for garnish

8Instructions

  1. 1

Separate the egg whites and yolks into two different bowls.

  2. 2

Whisk the egg yolks with the water and a pinch of salt until well combined.

  3. 3

In a separate clean bowl, beat the egg whites until they form soft, airy peaks.

  4. 4

Gently fold the yolk mixture into the whipped egg whites using a spatula, being careful not to deflate them too much.

  5. 5

Melt the butter in a nonstick skillet over medium low heat.

  6. 6

Pour the egg mixture into the pan and cook for about 3 to 4 minutes until the bottom is set and the top looks puffy.

  7. 7

Carefully fold the omelette in half and slide it onto your plate.

  8. 8

Top with your favorite fresh herbs before serving.

Tips

Serve this immediately while it is still nice and tall. If you have leftovers, they do not keep well, so it is best to cook exactly what you plan to eat right away.
