My Favorite Huevos Rancheros
Crispy corn tortillas topped with warm beans, fried eggs, and a smoky tomato sauce make for the perfect breakfast.
easy.enzo81.xyzI absolutely love ordering huevos rancheros whenever I see them on a menu. After years of tinkering with my own homemade version, this is the one I keep coming back to whenever I want something hearty and delicious.
The ranchero sauce starts with broiled tomatoes, onion, chiles, and garlic. A little chipotle powder adds a nice smoky flavor, and a squeeze of lime brightens everything up. It is a fantastic way to start your day.
Ingredients
- 4 large eggs
- 4 corn tortillas
- 1 cup refried black beans, warmed
- 4 roma tomatoes
- 1/2 white onion, chopped
- 1 serrano chile
- 2 cloves garlic
- 1/2 teaspoon chipotle powder
- 1 tablespoon lime juice
- 1/2 cup crumbled queso fresco
- 1 avocado, sliced
- Fresh cilantro for garnish
- Salt to taste
- Olive oil for cooking
6Instructions
- 1
Set your oven to broil and place the tomatoes, onion, serrano chile, and garlic on a baking sheet. Broil them until the vegetables are charred, then blend them until smooth.
- 2
Pour the blended sauce into a pan, stir in the chipotle powder and lime juice, and let it simmer for about 5 minutes.
- 3
Lightly fry the corn tortillas in a skillet with a little oil until they are crisp, then set them aside.
- 4
Fry your eggs in the same skillet to your desired level of doneness.
- 5
Spread a layer of warm refried beans on each tortilla, top with a fried egg, and spoon the warm ranchero sauce over the top.
- 6
Garnish with crumbled cheese, fresh avocado slices, and cilantro before serving.
Tips
You can store leftover sauce in an airtight container in the fridge for up to 3 days. To make this meal faster, prep the sauce ahead of time and just reheat it while you fry the eggs.
