If you have a sourdough starter sitting on your counter, these pizza pockets are the perfect project for you. They offer that wonderful tang of sourdough in a convenient, handheld form that is much tastier than anything you will find in the freezer aisle.

I love keeping a batch of these in the freezer for busy days. They are simple to assemble, and you can easily customize the fillings based on what you have in the fridge. Just remember to let your filling cool down before you seal the dough to keep everything secure while they bake.

Ingredients

  • 1 batch sourdough pizza dough (prepared and risen)
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 2 tablespoons melted butter
  • 1 teaspoon garlic paste
  • 1/4 cup grated parmesan cheese
  • Fresh basil for garnish

7Instructions

  1. 1

Preheat your oven to 400Β°F and line a baking sheet with parchment paper.

  2. 2

Divide your risen pizza dough into equal portions and roll each piece into a small rectangle about 1/4 inch thick.

  3. 3

Spoon a small amount of pizza sauce onto the center of each rectangle, then top with a sprinkle of mozzarella and a few slices of pepperoni.

  4. 4

Fold the dough over the filling and press the edges firmly with a fork to create a tight seal.

  5. 5

Place the pockets on the prepared baking sheet and bake for 15 to 20 minutes until they are golden brown.

  6. 6

While they bake, mix the melted butter and garlic paste in a small bowl.

  7. 7

Brush the warm pizza pockets with the garlic butter and sprinkle with parmesan and basil before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to 4 days. You can also wrap them individually to freeze for up to 2 months. To reheat, just place them on a baking sheet at 350Β°F until they are heated through and crispy again.
