Herby Homemade Falafel
This recipe makes crispy, golden falafel with a bright green center that is full of fresh herb flavor.
easy.enzo81.xyzMy husband is a huge fan of falafel and orders it whenever we go out, so I knew I had to come up with a great version to make at home. These are packed with fresh parsley and cilantro, which gives them a beautiful color and a really fresh taste that goes perfectly with a creamy tahini sauce.
The best part about these is the contrast between the crunchy outside and the soft, herby middle. For the best results, remember to soak your dried chickpeas overnight because canned ones just will not give you that same classic texture we all love.
Ingredients
- 1 cup dried chickpeas, soaked overnight and drained
- 1 cup fresh parsley leaves
- 1 cup fresh cilantro leaves
- 4 garlic cloves, minced
- 1 small yellow onion, chopped
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon baking soda
- Vegetable oil for frying
7Instructions
- 1
Add the soaked chickpeas, parsley, cilantro, garlic, onion, lemon juice, cumin, coriander, salt, and pepper into a food processor.
- 2
Pulse the ingredients together until the mixture is finely ground and looks like coarse sand, making sure not to turn it into a paste.
- 3
Move the mixture to a bowl and stir in the baking soda, then cover the bowl and let it chill in the fridge for at least 30 minutes.
- 4
Form the chilled mixture into small balls or slightly flattened patties using about two tablespoons for each one.
- 5
Fill a deep pan with about two inches of oil and heat it over medium heat until it reaches 350 degrees Fahrenheit.
- 6
Carefully drop the falafel into the hot oil in small batches and fry for about 3 to 4 minutes until they are dark golden brown.
- 7
Use a slotted spoon to move the finished falafel to a plate lined with paper towels to drain before serving.
Tips
You can keep leftover falafel in a sealed container in the refrigerator for up to three days. To get them crispy again, just pop them in a warm oven or an air fryer for a few minutes. You can also freeze the shaped but uncooked patties for an easy dinner later on.
