This smoky andouille lentil soup is exactly what I want simmering on the stove when the weather turns chilly. It is the perfect balance of protein, fiber, and garden vegetables with a zesty kick that makes every spoonful exciting.

Most of the cooking time is hands off while the lentils soften and soak up all that wonderful flavor. My favorite part is the finish with fresh kale and a squeeze of lemon to brighten everything up before serving.

Ingredients

  • 1 tablespoon olive oil
  • 12 ounces andouille sausage, sliced into rounds
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 cup dried brown or green lentils, rinsed
  • 1 can (14 ounces) fire roasted diced tomatoes
  • 6 cups vegetable or chicken broth
  • 4 cups chopped kale
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

7Instructions

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the sliced andouille sausage and cook until it starts to brown, about 5 minutes.

  3. 3

Add the diced onion and cook until it softens, then stir in the garlic and smoked paprika for another minute.

  4. 4

Pour in the rinsed lentils, fire roasted tomatoes, and the broth. Bring the mixture to a boil.

  5. 5

Turn the heat to low, cover the pot, and let it simmer for about 30 to 40 minutes until the lentils are tender.

  6. 6

Stir in the chopped kale and cook for 3 minutes until it wilts.

  7. 7

Remove from heat, stir in the lemon juice, and season with salt and pepper to your preference.

Tips

Serve this soup with a side of warm crusty bread for dipping. If you have leftovers, keep them in an airtight container in the fridge for up to four days. It actually tastes even better the next day after the flavors have had time to meld.
