These fajita bowls are perfect when you want a hearty dinner without the fuss of traditional steak fajitas. By using ground beef, you get a budget friendly meal that comes together in a flash since there is no marinating required.

I love keeping pre cooked jasmine rice on hand to make these even faster on busy weeknights. It is a fantastic way to clear out the fridge while serving up a colorful and nutritious dinner that the whole family will enjoy.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups cooked jasmine rice
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, thinly sliced
  • 1 cup corn kernels
  • 1 ripe avocado, sliced
  • 1 lime, cut into wedges
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

7Instructions

  1. 1

Heat one tablespoon of olive oil in a large skillet over medium high heat.

  2. 2

Add the sliced peppers and onions to the skillet and cook until they are tender and slightly charred, about 5 minutes. Remove them from the pan and set aside.

  3. 3

Add the remaining tablespoon of oil to the same skillet and brown the ground beef until fully cooked.

  4. 4

Stir the taco seasoning into the beef, adding a splash of water if needed to coat the meat evenly.

  5. 5

Divide the cooked jasmine rice into four serving bowls.

  6. 6

Top each bowl with the seasoned beef, the sautéed peppers and onions, and a scoop of corn.

  7. 7

Finish each bowl with a few avocado slices, a squeeze of fresh lime juice, and a sprinkle of cilantro before serving.

Tips

Store any leftovers in airtight containers in the fridge for up to three days. For the freshest taste, slice the avocado right before serving so it does not turn brown. You can also add a dollop of sour cream or your favorite salsa for extra flavor.
