There is something so special about a bowl of classic beef and noodles. It is the kind of meal that reminds me of Sunday dinners at my grandmother's house where everything was made from scratch and cooked with a lot of love.

The secret here is to take your time with the chuck roast. By letting it simmer slowly, the meat becomes so tender it practically melts in your mouth, which is exactly what you want when paired with hearty egg noodles.

Ingredients

  • 2 pounds chuck roast, cut into large chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 4 cups beef broth
  • 2 cups water
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 12 ounces wide egg noodles
  • Salt and black pepper to taste
  • Fresh parsley for garnish

10Instructions

  1. 1

Heat the oil in a large pot or Dutch oven over medium high heat.

  2. 2

Season the beef chunks with salt and pepper and sear them in the pot until brown on all sides.

  3. 3

Remove the beef and add the diced onion to the pot, cooking until soft and golden.

  4. 4

Return the beef to the pot and pour in the beef broth and water.

  5. 5

Add the thyme and bay leaf, then bring the liquid to a gentle boil.

  6. 6

Reduce the heat to low, cover the pot, and simmer for about 2 to 3 hours until the meat is very tender.

  7. 7

Remove the bay leaf and use two forks to shred the beef into smaller pieces directly in the pot.

  8. 8

Bring the liquid back to a simmer and add the egg noodles.

  9. 9

Cook the noodles directly in the sauce until they are tender and have absorbed some of the flavorful broth.

  10. 10

Serve hot in deep bowls with a sprinkle of fresh parsley.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. The noodles will soak up the broth over time, so you might need to add a splash of water or beef stock when reheating. This dish is wonderful served alongside a crisp green salad or some buttery dinner rolls.
