There is nothing quite like the smell of spiced bread baking in the oven on a chilly afternoon. This butternut squash bread is my favorite way to celebrate the season because it stays incredibly moist and tastes even better with a generous layer of cinnamon walnut streusel on top.

I love using brown butter in this recipe to add a deep, nutty note that pairs perfectly with the sweet squash. It is the ideal treat to share with friends over coffee or to keep on the counter for a quick morning snack.

Ingredients

  • 1 cup roasted and mashed butternut squash
  • 1/2 cup unsalted butter, browned
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts
  • 1/4 cup brown sugar for the streusel
  • 1 teaspoon cinnamon for the streusel

9Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.

  2. 2

In a small saucepan over medium heat, melt the butter and cook until it turns golden brown and smells nutty. Set it aside to cool slightly.

  3. 3

In a large bowl, whisk together the mashed butternut squash, brown butter, maple syrup, eggs, and vanilla extract until smooth.

  4. 4

In a separate bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.

  5. 5

Gently fold the dry ingredients into the wet mixture until just combined, then stir in half of the chopped walnuts.

  6. 6

Pour the batter into your prepared loaf pan.

  7. 7

In a small bowl, mix the remaining walnuts, brown sugar, and the extra teaspoon of cinnamon. Sprinkle this mixture evenly over the top of the batter.

  8. 8

Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.

  9. 9

Let the bread cool in the pan for 10 minutes before moving it to a wire rack to cool completely.

Tips

Store this bread in an airtight container at room temperature for up to three days. It also freezes beautifully if you wrap individual slices tightly in plastic wrap. Serve it warm with a little extra butter or a dollop of whipped cream.
