There is nothing quite like a steaming bowl of rice and chicken when you need something simple and nourishing. The combination of ginger, garlic, and a hint of lime gives this meal so much flavor without needing hours in the kitchen.

My favorite thing about this recipe is how the broth soaks into the rice, making every spoonful delicious. It is the perfect meal to whip up on a busy Tuesday when you just want to relax.

Ingredients

  • 2 chicken breasts, cut into bite sized pieces
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cups cooked white rice
  • 3 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil

6Instructions

  1. 1

In a small bowl, mix the brown sugar and lime juice. Toss the chicken pieces in this mixture and let them sit for 10 minutes.

  2. 2

Heat the vegetable oil in a pan over medium high heat and cook the chicken until it is golden brown and cooked through. Remove the chicken from the pan and set it aside.

  3. 3

In the same pan, add the minced garlic and grated ginger. Cook for one minute until fragrant.

  4. 4

Pour in the chicken broth and soy sauce. Bring the liquid to a simmer for about 5 minutes to let the flavors meld.

  5. 5

Divide the cooked rice into bowls. Place the chicken on top and pour the hot broth over each bowl.

  6. 6

Garnish with the sliced green onions before serving.

Tips

You can store leftovers in an airtight container for up to two days, but keep the broth separate from the rice so it does not get soggy. If you want more heat, stir in a spoonful of chili oil just before serving.
