If you have a bag of frozen dumplings in your freezer, you are already halfway to a delicious dinner. This bake is a lifesaver on busy weeknights because you do not have to boil the rice or cook the dumplings separately. Everything goes into one dish, which means minimal cleanup and a lot more time to relax.

People love this dish because it packs all those savory, takeout inspired flavors into a simple casserole. Feel free to swap the vegetables based on what you have in your fridge, like adding spinach or mushrooms for extra texture. It is truly an effortless way to get a complete meal on the table.

Ingredients

  • 1 1/2 cups long grain white rice
  • 2 1/2 cups chicken broth
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 3 teaspoons ginger, minced
  • 2 teaspoons sesame oil
  • 1 teaspoon rice vinegar
  • 2 cups bok choy, chopped
  • 1 cup shredded carrots
  • 20 to 24 frozen potstickers
  • Green onions and sesame seeds for garnish

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

  2. 2

In the baking dish, combine the rice, chicken broth, soy sauce, minced garlic, minced ginger, sesame oil, and rice vinegar. Stir well to make sure everything is evenly mixed.

  3. 3

Scatter the chopped bok choy and shredded carrots over the top of the rice mixture.

  4. 4

Arrange the frozen potstickers on top of the vegetables.

  5. 5

Cover the dish tightly with aluminum foil and bake for 45 minutes.

  6. 6

Check the rice to ensure it is tender and fully cooked. If it needs more time, cover it back up and bake for a few extra minutes.

  7. 7

Serve warm with a drizzle of your favorite dipping sauce and garnish with green onions and sesame seeds.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 4 days. When reheating, add a small splash of broth or water and microwave until hot. Freezing is not recommended for this dish as the texture of the rice and dumplings will change.
