If you love the taste of enchiladas but dread the time it takes to roll them up, this casserole is your new best friend. It has all the savory goodness of seasoned ground beef, zesty red sauce, and black beans, all layered into one cozy dish that is perfect for a busy weeknight.

I recommend using corn tortillas for this recipe because they hold their shape beautifully and absorb the sauce perfectly. Just dip them, layer them, and bake until you have a bubbly meal that the whole family will ask for again and again.

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 bell peppers, diced
  • 1 pound 90% lean ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 28 ounces red enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 can diced green chiles
  • 12 corn tortillas
  • 2 cups shredded Colby Jack or Monterey Jack cheese
  • Optional toppings: avocado, cilantro, lime juice, Greek yogurt or sour cream

9Instructions

  1. 1

Preheat your oven to 375 degrees F and lightly spray a casserole dish with nonstick cooking spray.

  2. 2

Heat the olive oil in a large skillet over medium high heat. Add the onion and bell peppers, cooking for 10 minutes until they are soft.

  3. 3

Add the ground beef, cumin, garlic powder, oregano, and salt. Cook for about 6 minutes, breaking the meat apart with a spoon until it is fully browned.

  4. 4

Stir in 1 cup of the enchilada sauce, the black beans, and the green chiles. Let it simmer for 3 minutes until the mixture thickens, then remove from heat.

  5. 5

Pour the remaining enchilada sauce into a wide, shallow bowl. Spread 1/4 cup of sauce on the bottom of your baking dish.

  6. 6

Use tongs to dip 4 tortillas into the sauce, coating both sides, and lay them in the baking dish. Spread one third of the meat mixture over them and sprinkle with 1/2 cup of cheese.

  7. 7

Repeat these layers twice more, using the remaining tortillas, beef, and cheese. Pour any leftover sauce over the top.

  8. 8

Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes until the cheese is bubbling.

  9. 9

Let the casserole rest for 10 minutes before slicing so the layers set properly. Add your favorite toppings and serve warm.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. For the best melt, grate your own cheese from a block instead of buying pre shredded bags. If you have extra time, serve this alongside a fresh cilantro lime rice or a simple green salad.
