If you are looking for a showstopping dessert, these stuffed dates are exactly what you need. They have become famous for a reason, and they bring together the deep sweetness of Medjool dates with the buttery crunch of pistachio filling.

My favorite thing about this recipe is how easy it is to customize. You can make them ahead of time for a dinner party or just keep a small batch in the fridge for when you need a little afternoon pick me up.

Ingredients

  • 12 large Medjool dates, pitted
  • 1/2 cup Kataifi dough, shredded and toasted
  • 1/2 cup pistachio butter
  • 1 cup milk chocolate or dark chocolate, melted
  • 1 tablespoon vegetable oil or coconut oil
  • Crushed pistachios for topping

7Instructions

  1. 1

Use a knife to cut a slit down the side of each date and remove the pit.

  2. 2

In a medium bowl, mix the toasted Kataifi dough with the pistachio butter until well combined.

  3. 3

Stuff each date generously with the pistachio and Kataifi mixture.

  4. 4

Melt the chocolate with the oil in a bowl until smooth.

  5. 5

Dip each stuffed date into the melted chocolate, making sure to coat it completely.

  6. 6

Place the dates on a tray lined with parchment paper and sprinkle with crushed pistachios while the chocolate is still wet.

  7. 7

Let the chocolate set in the fridge for about 20 minutes before serving.

Tips

Store these in an airtight container in the refrigerator to keep the chocolate snappy and the filling fresh. You can also drizzle a little extra melted chocolate over the top once they are set for a pretty professional look.
