There is nothing better than a dinner that comes together in under thirty minutes. These bowls are a favorite in my house because they are hearty and full of fresh flavors. You get that satisfying crunch from the salmon paired with creamy avocado and zesty sauce for a perfect bite every time.

My biggest tip is to make sure your salmon pieces are cut into even cubes so they cook at the same rate. If you have some leftover rice in the fridge, this meal comes together even faster. Just don't forget to squeeze a bit of fresh lemon over everything right before you dig in.

Ingredients

  • 1 pound salmon fillets, skin removed and cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • 1 ripe avocado, sliced
  • 1 cup cucumber, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • Fresh lemon wedges for serving

6Instructions

  1. 1

Preheat your air fryer to 400 degrees Fahrenheit.

  2. 2

In a medium bowl, toss the salmon cubes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

  3. 3

Place the salmon in the air fryer basket in a single layer and cook for 7 to 9 minutes, shaking the basket halfway through until the edges are crispy.

  4. 4

While the salmon cooks, stir together the mayonnaise, sriracha, and soy sauce in a small bowl to make the sauce.

  5. 5

Divide the cooked rice into bowls and top with the crispy salmon, sliced avocado, and diced cucumber.

  6. 6

Drizzle the spicy mayo over the bowls and finish with a squeeze of fresh lemon juice.

Tips

Store any leftover salmon in an airtight container in the fridge for up to two days. For the best texture, reheat the salmon in the air fryer for a few minutes before adding it to fresh rice. You can also add pickled ginger or shredded carrots to add extra color and crunch.
