When the weather gets chilly, there is nothing quite like a big bowl of creamy tortellini soup to warm your soul. It is one of those comforting meals that feels fancy but comes together with simple ingredients right in your own kitchen.

I love using a good three cheese tortellini for this recipe because it adds the perfect texture to every spoonful. Be sure to stir in your kale at the very end so it stays bright and slightly crisp rather than wilted.

Ingredients

  • 1 pound Italian pork sausage
  • 1 tablespoon olive oil
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can crushed tomatoes
  • 1 package three cheese tortellini
  • 2 cups fresh kale, chopped
  • 1/2 cup heavy cream

8Instructions

  1. 1

Brown the Italian sausage in a large pot over medium heat until fully cooked.

  2. 2

Add the olive oil, carrots, and onion to the pot, then sauté until the vegetables are soft.

  3. 3

Stir in the minced garlic and cook for one minute until fragrant.

  4. 4

Pour in the chicken broth and crushed tomatoes, then bring the mixture to a gentle simmer.

  5. 5

Add the tortellini and cook for about five minutes until the pasta is tender.

  6. 6

Reduce the heat and stir in the heavy cream and chopped kale.

  7. 7

Simmer for another two minutes until the kale is just wilted and the soup is hot.

  8. 8

Serve immediately in deep bowls with a side of crusty bread.

Tips

If you have leftovers, store them in an airtight container in the fridge for up to three days. Keep in mind that the pasta will soak up some liquid, so just add a splash of broth or water when reheating on the stove.
