There is nothing quite like a warm bowl of French onion soup on a chilly evening. This pasta version captures that same deep, savory sweetness by slow cooking onions until they are golden and caramelized. Adding a splash of wine and fresh thyme gives it that classic bistro feel right in your own kitchen.

Since this is a one pot meal, the pasta cooks directly in the flavorful broth. This creates a thick and silky sauce that coats every single noodle perfectly. It is a fantastic way to get a gourmet style dinner on the table without needing a mountain of dishes to clean up afterward.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 8 ounces pasta, such as linguine or fettuccine
  • 1/4 cup heavy cream
  • 1 cup grated Gruyere cheese
  • Salt and black pepper to taste

9Instructions

  1. 1

Heat the butter and olive oil in a large pot or deep skillet over medium heat.

  2. 2

Add the sliced onions and cook them slowly for about twenty minutes, stirring often, until they are deep golden brown and soft.

  3. 3

Stir in the minced garlic and thyme, cooking for one minute until fragrant.

  4. 4

Pour in the white wine and use a wooden spoon to scrape up any tasty browned bits from the bottom of the pot.

  5. 5

Add the beef broth and bring the mixture to a gentle boil.

  6. 6

Submerge the pasta into the liquid and cook according to the package directions, stirring occasionally to prevent sticking.

  7. 7

Once the pasta is al dente and most of the liquid has reduced into a sauce, stir in the heavy cream.

  8. 8

Remove from heat and stir in the grated Gruyere cheese until melted and smooth.

  9. 9

Season with salt and pepper to your liking before serving.

Tips

Serve this pasta with a side of toasted baguette slices to scoop up any extra sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days and add a splash of water when reheating.
