I have been seeing variations of this salad all over my feed lately, and I finally had to make it my own. It is such a bright and satisfying dish that uses simple pantry staples like frozen peas and leftover chicken to make something really special.

The secret to getting the best flavor is letting it sit in the fridge for a bit before you eat. This gives the lemon and herbs a chance to really soak into the chicken, making every bite extra tasty.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup frozen sweet peas, thawed
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 cup red onion, finely diced
  • 1/2 cup celery, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and black pepper to taste

5Instructions

  1. 1

In a large mixing bowl, combine the shredded chicken, thawed peas, diced red onion, and chopped celery.

  2. 2

In a smaller bowl, whisk together the mayonnaise, lemon juice, lemon zest, and fresh dill until the dressing is smooth.

  3. 3

Pour the dressing over the chicken mixture and toss everything together until it is well coated.

  4. 4

Season with salt and pepper to taste, then give it one final stir.

  5. 5

Cover the bowl and refrigerate for at least 30 minutes to let the flavors blend before serving.

Tips

Store leftovers in an airtight container in the fridge for up to three days. It tastes great served on toasted bread, inside a wrap, or even just scooped up with some crunchy crackers.
