There is something so special about the smell of pumpkin spice and fresh oranges baking in the oven. I love how the brown butter adds a rich, toasty flavor that pairs perfectly with the sweetness of the pumpkin and honey.

These muffins are a regular favorite in my kitchen during the fall months. If you want a little extra indulgence, go ahead and fold a handful of dark chocolate chips into the batter before you bake them.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup pumpkin puree
  • 1/2 cup honey
  • 1/4 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice for the glaze

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.

  2. 2

In a small saucepan over medium heat, melt the butter and cook it until it turns golden brown and smells nutty. Set it aside to cool slightly.

  3. 3

In a large bowl, whisk together the pumpkin puree, honey, orange juice, vanilla, and the browned butter.

  4. 4

Add the flour, pumpkin pie spice, baking soda, and salt to the wet ingredients. Mix until just combined, being careful not to overmix.

  5. 5

Divide the batter evenly into the muffin tin cups.

  6. 6

Bake for 20 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

While the muffins cool, whisk together the powdered sugar and the remaining orange juice until smooth.

  8. 8

Drizzle the glaze over the cooled muffins before serving.

Tips

Store these muffins in an airtight container at room temperature for up to three days. If you want to keep them longer, they freeze beautifully for up to two months. Simply thaw them on the counter when you are ready to eat.
