There is something so satisfying about making your own bread, especially when it is as easy as this focaccia. Because it spends the night in the refrigerator, the flavor gets a chance to develop beautifully without you needing to stand over the counter kneading dough.

My biggest tip for success is to use a generous amount of good quality olive oil in your pan. It makes the bottom of the bread turn golden and crispy while keeping the inside light and airy. It is the best way to get that bakery quality result at home.

Ingredients

  • 4 cups all purpose flour
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 2 cups warm water
  • 4 tablespoons extra virgin olive oil for the dough
  • 2 tablespoons extra virgin olive oil for the pan
  • 1 teaspoon flaky sea salt for topping

8Instructions

  1. 1

In a large mixing bowl, whisk together the flour, yeast, and salt.

  2. 2

Pour in the warm water and four tablespoons of olive oil, then stir until you have a sticky dough.

  3. 3

Cover the bowl with plastic wrap and place it in the refrigerator for at least twelve hours or up to twenty four hours.

  4. 4

Grease a 9x13 inch baking pan with two tablespoons of olive oil.

  5. 5

Transfer the dough to the pan, cover it, and let it rest at room temperature for two hours until it fills the pan.

  6. 6

Preheat your oven to 425 degrees Fahrenheit.

  7. 7

Use your fingers to poke deep dimples all over the surface of the dough, drizzle with a little extra oil if you like, and sprinkle with sea salt.

  8. 8

Bake for 20 to 25 minutes until the top is golden brown and the bread sounds hollow when tapped.

Tips

Store any leftovers in an airtight container at room temperature for up to two days. If you want to refresh the crust, pop it in a hot oven for five minutes before serving.
