These muffins have become my go to breakfast lately. They are simple to whip up, hearty, and feel like a special treat thanks to that crunchy cinnamon topping.

I love keeping these on hand for busy mornings or as a quick snack for the kids. They stay nice and moist, especially when you use thick Greek yogurt as the base.

Ingredients

  • 1 cup whole milk Greek yogurt
  • 3 large eggs
  • 3 1/2 cups old fashioned rolled oats
  • 3/4 cup brown sugar, lightly packed
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 2 cups Honeycrisp apples, roughly chopped
  • 4 tablespoons butter, melted
  • 1/3 cup brown sugar
  • 1/2 cup plus 3 tablespoons all purpose flour

10Instructions

  1. 1

Preheat your oven to 350 degrees and lightly grease a muffin tin with oil.

  2. 2

Combine the yogurt, eggs, oats, brown sugar, baking soda, baking powder, vanilla, cinnamon, and salt in a blender.

  3. 3

Blend in short bursts until the mixture is mostly smooth but still retains a slight texture similar to bran muffin batter.

  4. 4

Add the chopped apples to the blender and pulse for 15 to 20 seconds until they are incorporated in small flecks.

  5. 5

In a small bowl, mix the melted butter, brown sugar, and flour with a fork or your hands until the streusel resembles small pebbles.

  6. 6

Let the muffin batter rest for 10 minutes while you prepare the pans.

  7. 7

Pour the batter into the muffin cups, filling them about 2/3 of the way full.

  8. 8

Sprinkle a spoonful of the streusel mixture over the top of each muffin.

  9. 9

Bake for 16 to 18 minutes, or until the tops spring back when touched.

  10. 10

Allow the muffins to cool in the pan for 10 to 15 minutes before serving.

Tips

Store your muffins in an airtight container at room temperature for a couple of days, or freeze them for longer storage. They taste wonderful warmed up in the microwave with a tiny pat of butter on top.
