This Greek chicken soup is one of my absolute favorites when I need something cozy and bright. It uses a simple trick with eggs and lemon to get that creamy texture without any heavy dairy, which makes it feel light yet satisfying at the same time.

I love how the citrus flavor wakes up the savory chicken broth. If you are in a hurry, you can use a rotisserie chicken from the store to save a lot of time on the prep work.

Ingredients

  • 6 cups chicken broth
  • 1 cup uncooked white rice
  • 2 cups cooked chicken, shredded
  • 3 large eggs, at room temperature
  • 1/2 cup fresh lemon juice
  • Salt and black pepper to taste
  • Fresh dill for garnish

7Instructions

  1. 1

Pour the chicken broth into a large pot and bring it to a boil over medium high heat.

  2. 2

Add the rice to the pot and reduce the heat to a simmer. Cover the pot and cook for about 15 minutes or until the rice is tender.

  3. 3

Stir in the shredded chicken and keep the pot on low heat while you prepare the lemon and egg mixture.

  4. 4

In a medium bowl, whisk the eggs until they are very frothy, then slowly whisk in the lemon juice.

  5. 5

Slowly pour about one cup of the hot broth into the egg mixture while whisking constantly. This helps warm the eggs slowly so they do not scramble.

  6. 6

Pour the egg and broth mixture back into the main pot. Stir everything well on low heat for a few minutes until the soup thickens slightly, but do not let it boil.

  7. 7

Taste the soup and add salt and pepper as needed. Serve it hot with fresh dill on top.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. When you reheat it, use low heat on the stove and stir often to keep the texture smooth.
